lots of fennel- whatever should I do with it?

We just picked up our harmony valley box and our fridge is now packed with wonderful, yummy, healthy green (and red in the case of the currants and strawberries) food! I have plans for the kohlrabi (a coleslaw) and of course the saute greens and salad stuff we go through very quickly. The green onions we use in omelets and salads and such. The snap peas and broccoli we will have for dinner during the week, and the currants and strawberries I can add to ice cream. BUT, we have SO MUCH fennel and parsley. I will have to figure out what to do with it. We just had salads with green onions, fennel and parsley and those were really good. I can also freeze some of the fennel and parsley for use during the year (that's what I did with the cilantro and mint). The boxes we get are so amazing- we are eating so healthy and getting the box is like christmas. Next year we are definitely going to do once a week, instead of the every-other-week as we go through the veggies so quickly!
